
Our "adopted" son Juan Pablo Rodriguez, now a brother and seminarian with the Missionary of Charity Fathers in Rome, sent me this recipe in a letter he wrote last October. He is from Columbia, but we met him in Honduras when he came down to serve as a Missioner of Christ. This past Friday, I finally got around to trying it out.

First you take plantains that are really ripe.

Cut them into one inch long pieces, fry them, and smash them.

Put cheese and some sort of fruit jam in between two pieces. The recipe called for guava paste, but we used apricot jelly since that's what we had.

Dip the sandwiches in a simple flour, milk, sugar, egg batter and fry. I should have added more flour to the batter as they are supposed to be like fritters.

We all tried them right out of the pan, so the faces I got of the kids were of "oh, that's caliente!"
